Cooking with The Early Show: Salmon with Bowtie Pasta and Peppercorn Russian Dressing
This week on Cooking with the Early Show we went to Randy's Restaurant in Downtown Amarillo. Cari Allred taught us how to make Salmon and Bowtie Pasta with Peppercorn Russian Dressing.
First she chopped pancetta and applewood smoked bacon and set it aside. Then she combined ketchup, mayonnaise, green olives, relish and pepper for the dressing.
Second, she cooked the salmon in a pan with a little olive oil and pepper. Then she heated up another pan to cook the bacon. After that, she added the cooked pasta, and the dressing to the skillet.
Next she added a side of asparagus to the salmon pan to cook a bit. Then she laid the pasta on the plate and laid the salmon and asparagus on top to serve.
*Cooking Tip: Cari suggests adding ice water to your pasta once you have cooked it to Al Dente (or however you prefer it) in order to keep it from cooking any further before you're ready to add more ingredients.
