Say cheese, not for your picture but for the Hilmar Cheese Plant in Dalhart. Crews have worked the past seven months to build the 40 acre facility. David Ahlem, Site Manager says construction is on schedule. The outside buildings are mostly complete, now they are working on equipment installation. Some of the finished parts include several 83 foot milk storage silos which can each hold 100,000 gallons milk, sections for cheese processing and a cold a storage facility. Once complete they will make about half a million pounds of cheese a day. The plant will make several cheeses including cheddar, colby jack, pepper jack and many others. Ahlem says they should finish construction soon and make and distribute cheese sometime this fall. They have over 100 jobs they will need to fill soon and hope to start hiring this summer.
