In celebration of Mardi Gras, Chef Bud Andersen from Ben E. Keith Foods joined Larry Lemmons and Michelle Langowski on NewsChannel10's Early Show with a spicy Cajun meal and a simple King cake.
Cajun Shrimp and Rice:
*1 tblspn unsalted butter
* 2 tblspn extra virgin olive oil
* 3 cloves garlic, minced
* 2 tsp McCormick Cajun seasoning
* 1 lb 16/20 shrimp, peeled, deveined, tail on
* Kosher salt
* Coarse ground black pepper
* 4 each plum or Roma tomatoes, chopped
* 2 bunches scallions, chopped
* 3 cups cooked white rice
* 3 tblspn fresh parsley chopped
* lemon wedges, for serving
Heat the butter, olive oil and garlic in a large skillet over medium high heat about 1 minute.
Add Cajun seasoning and shrimp and cook, stirring, until shrimp begin to curl about 1 minute.
Season with salt and pepper.
Add the tomatoes and scallions to the skillet and cook, stirring about 1 minute.
Add the rice and ¼ cup water and continue to cook until the rice is warmed through and the shrimp and opaque, about 3 more minutes.
Stir in the parsley and serve with lemon if desired.

* 2 8 oz. cans crescent rolls
* 4 oz reduced fat cream cheese
* 2 tblspn confectioner sugar
* 1 tsp vanilla extract
* 2 tblspn butter
* 1/3 c light brown sugar
* 1 tbspn cinnamon
Mardi Gras Icing:
*1 c confectioner sugar
* 2 tblspn skim milk
* ½ tsp vanilla extract
* yellow, green, red and blue food coloring
Preheat oven to 350 degrees.
Coat a 10 inch pizza pan with cooking spray.
Separate crescent rolls at perforations into 16 pieces.
Arrange crescent rolls pieces in prepared pan in a circle, with points in the center.
About halfway down the points, press seams together.
Beat cream cheese, confectioner's sugar and vanilla with an electric mixer until creamy.
Spread over dough where seams have been pressed together.
In a small bowl, using a fork, combine butter, brown sugar and cinnamon.
Sprinkle over cream cheese.
Fold dough points over filling, then fold bottom of dough triangles over points, forming a circular roll like a king cake.
Bake 20-25 minutes or until golden brown. Cool slightly.
Drizzle cake with Mardi Gras icing combine all ingredients in a bowl, mix and color with food coloring.
